My Blackberry Does Not Have Green Eye Reduction

Gloco the Wonder Dog
(CARROLLTON) – Another Fish Friday. Tonight the Puppycat prepared her famous Headless Polynesian Pear Prawns while Gloco the Wonder Dog, well, glowed in the dark.
It’s rather amazing, the shrimp, not the dog – she created them today, from her mind and from scratch, and they are already famous, having been enshrined in the “Capture the random acts of Dining that turned out really good” cookbook/journal.
If you are interested, here is the recipe:


The Sauce

1 Medium pear diced into medium chunks

2 tbsp butter

1 lime

Grated lime rind

¼ bell pepper diced

1 tbsp almond slivers

¼ cup Sunny Delight

¼ cup honey

The Shrimp

2 lb medium shrimp

The Batter

1 ½ cup flour

¾ cup milk

1 egg

1 tbsp baking powder

½ tsp vanilla

4 drops Tabasco sauce

½ tsp pepper

pinch salt

dash nutmeg

½ tsp Caribbean jerk seasoning

The Oil

Oil of your choice for frying


In a sauce pan melt butter add pears and lime. Let pears brown a little, add bell pepper. Let cook for a bit and squeeze in juice of ½ lime. Let cook down and add almonds. Let almonds toast in butter. Add ½ of Sunny Delight, let simmer and reduce. Add honey and rest of Sunny Delight. Let cool down, add remaining ½ of lime juice Keep warm

Mix batter ingredients – make sure it is the consistency of heavy cream. Drop in all shrimp and then pull out one at a time and drop into hot oil. Fry on medium high. You may need to fry in batches. We did three batches, pulling out the done ones and placing in a bowl to drain on paper towels.

When all shrimp is fried put in another bowl, pour on the sauce and fold in the shrimp. We served it on a bed of white rice, and it was a tasty delight.
